This post will go over everything you need to know to create this Filipino beef giniling.
Recipe difficulty: Totally beginner level
So how to make Filipino giniling? This saucy stew is so easy to make as the flavors all combine together! The prep work is actually harder than the cooking of the stew as the vegetables needs to be chopped. Don't worry about making the vegetables perfectly cut, as it will all be tossed into one pot. Honestly, it is the uneven cut of the vegetables and potatoes that makes the texture of this dish hearty!
Sam's Pro Tips for this Filipino Beef Giniling
Simmer the Stew
- Have the stew simmer until the potatoes are just cooked! The reason for this tip is that this Filipino giniling recipe has potatoes in it, and potatoes absorb liquid. You only want to cook the giniling until the potatoes have just fully cooked and not a minute longer, as it will take most of your liquid in the stew. Please note if you do have leftovers (which I highly doubt), the potatoes will also absorb a little of the liquid. Don't worry! Between the measurements of the tomato sauce and the water given, the recipe accounts for the absorption of the liquid and will be perfect!
Habaneros or No Habaneros?
- Try to leave the stem on when cutting the habanero or use gloves. Ok, so this tip was also included in my Spicy Filipino Sardines Recipe with Habaneros . Habaneros are very strong peppers! These peppers can burn your skin when mincing. So, when you cut the habanero, try to mince while leaving the stem on. You can place the habanero stem side down on the cutting board and cut around the seed pit. Or for safety, use food gloves!
- What can I use instead of the habanero? So traditionally, a red bell pepper is used for added spice, or even a green bell pepper. As we like our food on the spicy side, our go-to spice are habaneros! Tailor this recipe to how you like it, so bell peppers are a great medium option and will taste great in the stew for something milder!
How to Save Time
- Do you have any time-saving tricks? Yes, here are a couple I have with this dish. As there are a lot of vegetables and herbs in this dish, I usually buy my garlic cloves already peeled. Similarly, this is the same concept as my 13 Clove Creamy Garlic Chicken Recipe . For the habaneros, we get the Trader Joe's Hot Crispy Habanero Peppers in Olive Oil and use 1 1/2 teaspoons, which is equivalent to about 1 habanero. As a result, we don't worry about mincing the habanero or wearing gloves! The last tip for this beef giniling with tomato sauce is try to get a high lean content of ground beef. The reason for this is that it's a lot healthier, even if you don't strain the oil from the meat. Therefore, we usually get if we can 96% lean ground beef.
Key Ingredients – Filipino Beef Giniling
Below are some key and optional ingredients for this recipe:
Ground Beef
- Lean ground beef: With all the chunks of vegetables and tomato sauce, you only need a pound of lean ground beef. As discussed in the Tips section, try to get at least 96% lean as you don't need to necessarily strain the oil and it's a lot healthier!
Vegetables and Herbs
- Red ruby potatoes: So, I love using red ruby potatoes in this stew as it holds up better as it simmers, and the skin tastes great! I clean and wash six red ruby potatoes, and it gives a perfect, hearty flavor to this Filipino giniling recipe. Other potatoes can be used but the skin is thin enough that after a good cleaning, sliced into wedges or cubes, it pairs perfectly with the meat and vegetables!
- Onion: Dice a whole onion and throw it into the pot!
- Garlic: Only 3 cloves is needed for the best flavor!
- Habaneros (optional): We love the spice in this recipe! One habanero is needed for some kick! Certainly, tailor this recipe to your preference if you would like something milder. Likewise, red or green bell peppers are a good alternative!
- Carrots: The freshness of the carrots are great in this recipe! Dice one carrot for the rich vegetable taste.
- Peas: Peas have a very distinct taste, so only a ½ cup is needed. In other words, the peas will cook in the tangy tomato base of the soup and absorb all that rich flavor!
Sauce
- Tomato sauce: The base of the stew in this Filipino giniling recipe! This is so easy to throw in the pot. You can choose to dice fresh tomatoes, but the simplicity of the tomato sauce makes this stew extremely easy.
- Soy sauce: Salty and tangy! This will slightly darken the sauce and give a wonderful flavor.
- Fish sauce: Only a little bit is needed to add to that tangy flavor. Therefore, we use the Thai Kitchen Gluten Free Premium Fish Sauce as a flavor enhancer to this dish! Make sure to only add a little bit!
More Variations to this Recipe
There are a few ways you can variate this Filipino beef giniling. Here's how:
- Use ground pork or ground chicken. There are so many variations to this popular dish! Ground pork or chicken can be used and will taste great in the stew as it simmers in the sauce.
- Try this recipe with different bell peppers: In the Ingredients section, we mentioned in place of using a habanero, red or green bell peppers can be used for a milder flavor. Therefore, try a combination of both, as the colors will look absolutely mouth-watering in this dish!
- Add some sugar: If you would like some sweetness to this Filipino giniling, a couple teaspoons of sugar are sometimes added to that rich flavor to balance the salt level. However, for the measurements provided in this recipe, I don't think it's needed. Let me know if you gave it a try!
- What can I pair with this dish? This is a great hearty dish when it's cold outside, and pairs of course perfectly with rice! You have everything you need with the vegetables and meat. Additionally, for some added sweet vegetables on the side, you can't go wrong with our Spiced Honey Glazed Carrots Recipe with Pecans !
